Cashew Chicken

Results

This remains to be one of my favorite recipes and the proportions really worked out this time around.




    Ingredients

    Prep DayDay Of
    • Onion, 1/2
    • Bell Peppers, 2
    • Chicken Broth, 1/2 Can
    • Soy Sauce, 3 Tablespoons
    • Ground Ginger, 1/2 teaspoon
    • Chicken Breast, 1
    • Cornstarch, 1 Tablespoon
    • Cashew Nuts, 1/4 Cup



    Preparation
    Prep DayMorning Of
    • Onion, 1/2, small slices.
    • Bell Peppers, 2, in 1/4" strips
    • Sauce
      • Chicken Broth, 1/2 Can
      • Soy Sauce, 3 T
      • Ground Ginger, 1/2 t
      • Chicken, 1 breast, defrost.






      Cooking
      • Cut chicken into cubes.
      • Cook chicken until done. Set aside.
      • Bell Peppers, add to pan.
      • Onion, add to pan.
      • Cornstarch, 1 T, whisked into Sauce.
      • Add sauce to pan.
      • Cook until sauce has thickened and bell peppers have softened.
      • Chicken, add to pan.
      • Remove from heat.
      • Cashews, add to pan.
      • Toss to coat with sauce.
