Chicken with Sun Dried Tomato Cream Sauce

Serves 2. Each serving has approximately: 390 calories, 45g protein, 4.8g net carbs, 3.1g net carbs from vegetables, 5.9g total carbs, 1.1g fiber.



Ingredients

  • Chicken Breasts, 2
  • Unsalted Butter, 1 Tablespoon
  • Garlic, 1 clove, minced
  • Red Pepper Flakes, to taste
  • Chicken Broth, 1/4 cup
  • Heavy Cream, 1/8 cup
  • Sun dried tomatoes in oil, 1/4 cup drained
  • Mushrooms, 1/2 cup, sliced
  • Parmesan Cheese, 1/8 cup, grated
  • Thyme, 1/8 teaspoon
  • Oregano, 1/8 teaspoon
  • Basil, 1/8 teaspoon

Cauliflower crust pizza

I was surprised how well the cauliflower crust pizza turned out. The crust was pretty nice, though a bit soggy in the middle. I'd definitely do this again--probably just trying to thin the middle of the pizza crust a bit more or cooking a bit longer. There's probably enough food here for both me and my wife. The only problem will be finding pizza toppings we can both agree on.
