Pork and Cabbage w/ Ginger Sauce

Results
I can't say that this recipe turned out as good as I remember it and for me it might have been an issue with the cabbage being too firm. Part of the problem might be that I neglected to wash the cabbage before cooking, which I should remember to do in the future.

The carrots in ginger sauce were awfully good, though. I'm tempted to try a recipe of carrots, sweet potatoes and this ginger sauce, as that may be quite tasty.


Weekend Preparation
Ingredients for Prep Day

  • Pork Marinade
    • Sesame Oil, 2 Tablespoons
    • Soy Sauce, 2 teaspoons
    • Sherry, 2 teaspoons
  • Stir-Fry
    • Green Onions, 1 bunch
    • Garlic, 2 cloves
    • Ginger, 1 Tablespoon fresh
    • Canola Oil, 4 teaspoons
    • Carrots, 2
    • Bell Pepper, 1
    • Cabbage, 1 head
  • Ginger Sauce
    • Chicken broth, 1/2 Cup
    • Soy Sauce, 1/4 Cup
    • Sherry, 2 Tablespoons
    • Sugar, 1 Tablespoon
    • Sesame Oil, 1 teaspoon
    • Ginger, 1 Tablespoon fresh

Ingredients for Cooking Day
  • Pork, 1 medallion
  • Cornstarch, 1 Tablespoon, for Marinade
  • Cornstarch, 2 teaspoons, for Ginger Sauce
  • Flour, 1 Tablespoon, for Marinade
Preparation
  • Ginger Sauce
    • Whisk Chicken Broth, Soy Sauce, Sherry, Sugar, Sesame Oil, Ginger together.
    • Put in container and refrigerate.
  • Pork Marinade
    • Add Sesame Oil, Soy Sauce, Sherry together into a plastic bag.
    • Refrigerate.
  • Green Onion Mix
    • Mince Green Onions
    • Mince Garlic
    • Combine 1 teaspoon oil, green onions and garlic in a container and refrigerate.
  • Stir-Fry
    • Peel carrots and cut into matchsticks.
    • Cut the bell pepper into matchsticks.
    • Shred cabbage into 1" wide pieces
Morning of Cooking
  • Defrost the Pork by putting it in a plastic bag and the bag in a container of cold water, in the fridge.

Cooking
  • Pork + Pork Marinade
    • Slice pork into matchstick strips.
    • Add Flour and Cornstarch to the marinade bag. Squish until mixed.
    • Add pork to marinade bag. Allow to marinate for 30 minutes.
    • Cook pork until lightly browned, not fully cooked. (2-4 minutes). Set aside in a bowl.
  • Stir-fry
    • Add 1 teaspoon oil to the wok, heat until shimmering.
    • Add carrots, bell pepper, until barely tender, 3-4 minutes.
    • Add cabbage and toss continuously, until slightly wilted, 2 minutes.
    • Push food to the side and add Green Onion Mixture to center until fragrant, 15 seconds.
    • Stir Green Onion Mixture into the vegetables.
    • Return the pork, and run-off juices, to the wok.
  • Ginger Sauce
    • Whisk corn starch into the ginger sauce and add to Wok.
    • Simmer, tossing constantly, until pork is cooked through, 1-2 minutes.
