Broccoli Beef

Adapted From: The America's Test Kitchen Healthy Family Cookbook, p. 333.

Results
The food tasted fine. I think I used too much Broccoli and didn't cut it uniformly enough, so the broccoli flavor drowned out all the other flavors. Also, I'm not much of a fan of the bell peppers in this recipe.

This is probably the last time I'll use this particular recipe. Next time I'll try modifying a recipe my family has been using for years.



Weekend Preparation
Ingredients for Prep Day

  • Beef Marinade
    • Soy Sauce, 2 teaspoons
    • Sherry, 2 teaspoons
  • Stir-Fry
    • Green Onions, 1 bunch
    • Garlic, 6 cloves
    • Ginger, 1 Tablespoon fresh
    • Canola Oil, 4 teaspoons
    • Broccoli, 1/2 Costco bag
    • Bell Pepper, 2
  • Brown Sauce
    • Chicken broth, 1/2 Cup
    • Sherry, 1/4 Cup
    • Oyster Sauce, 3 Tablespoons
    • Soy Sauce, 1 Tablespoon
    • Sesame Oil, 1 teaspoon

Ingredients for Cooking Day
  • Beef, 1 Serving
  • Cornstarch, 2 teaspoons, for Brown Sauce

Preparation
  • Brown Sauce
    • Whisk Chicken Broth, Soy Sauce, Sherry, Oyster Sauce together.
    • Put in container and refrigerate.
  • Beef Marinade
    • Combine soy sauce and sherry in a bag.
    • Refrigerate.
  • Green Onion Mixture
    • Mince Green Onions
    • Mince Garlic
    • Shred ginger.
    • Combine 1 teaspoon oil, green onions, ginger, garlic in a container and refrigerate.
  • Stir-Fry
    • Cut broccoli into large florets.
    • Cut the peppers into matchsticks.

Morning of Cooking
  • Defrost the beef by putting it in a plastic bag and the bag in a container of cold water, in the fridge.

Cooking
  • Beef
    • Slice beef into matchstick strips.
    • Add beef to marinade bag. Allow to marinate for 30 minutes.
    • Cook beef until lightly brown on all sides but not fully cooked, 2 minutes. Set aside.
  • Stir-fry
    • Cook broccoli, adding 1/4 cup water, cover and steam, about 2 minutes.
    • Uncover and allow water to evaporate.
    • Stir in bell peppers.
    • Clear center of wok.
    • Add Green Onion Mixture to center until fragrant, 15 seconds.
    • Stir Green Onion Mixture into the vegetables.
    • Return the beef, and run-off juices, to the wok.
  • Brown Sauce
    • Whisk cornstarch (2 t) into the brown sauce and add to Wok.
    • Simmer, tossing constantly, until beef is cooked through, 1-2 minutes.
