This recipe is adapted from a recipe found on samosa-recipe.com. I make just the filling and skip the pastry and frying.

- Olive Oil, 1 Tablespoon, heat in frying pan
- Onion Mixture, add to pan.
- Garam Masala, 2 t, add to pan.
- Potato, 1, diced small, add to pan.
- Carrot, 1, diced small, add to pan.
- Chicken Broth, 1/2 Cup, add to pan. Cover pan. Simmer for 15 minutes.
- Peas, 1 can, drained, add to pan.
- Cilantro, 1 Tablespoon, add to pan.
- Cover pan. Simmer for 10 minutes.
- Salt, 1/2 teaspoon, add to pan.
