Samosas au naturel


This recipe is adapted from a recipe found on samosa-recipe.com. I make just the filling and skip the pastry and frying.
Results


Ingredients

  • Carrot, 1, diced small
  • Garlic, 2 cloves, minced
  • Onion, 1, diced small




  • Potato, 1, diced small
  • Peas, 1 can, drained
  • Cilantro, 1 Tablespoon, chopped small
  • Garam Masala, 1 Tablespoon
  • Olive Oil, 1 Tablespoon
  • Chicken Broth, 1/2 Cup
  • Salt, 1/2 teaspoon


Preparation
Prep Day
  • Onion Mixture:
    • Garlic, 2 cloves, minced.
    • Onion, 1, diced small.
  • Carrot, 1, diced small



Cooking

  • Olive Oil, 1 Tablespoon, heat in frying pan
  • Onion Mixture, add to pan.
  • Garam Masala, 2 t, add to pan.
  • Potato, 1, diced small, add to pan.
  • Carrot, 1, diced small, add to pan.
  • Chicken Broth, 1/2 Cup, add to pan. Cover pan. Simmer for 15 minutes.
  • Peas, 1 can, drained, add to pan.
  • Cilantro, 1 Tablespoon, add to pan.
  • Cover pan. Simmer for 10 minutes.
  • Salt, 1/2 teaspoon, add to pan.
